Processing & Performance Enhancers
- Lecithins are used right across the baking industry as emulsifiers, as release agents and as an aid to processing. Select from Adlec™ liquid lecithin, enzyme-modified Adlec E, Beakin™ complexed lecithin and de-oiled Ultralec® lecithin powder.
- ADM’s NovaXan™ xanthan gum is finding increasing application in bakery products, which will benefit from increased volume, improved structure and higher moisture retention leading to longer shelf life. The inclusion of small amounts of xanthan gum will suspend chocolate flavoured chips, nuts, fruits etc during baking.
- ADM also produces citric and lactic acids and their sodium and potassium salts, for flavour and pH control.
