Lecithin acts as a natural emulsifier, instantiser, antioxidant and flavour protector. Its use is well known in chocolate and compound coatings but it also offers product and processing benefits in caramels and fudges, toffees and brittles, as well as chewing gum. Oils & Fats
ADMs vegetable oils and fats are essential ingredients and used extensively in chocolate flavoured coatings and fillings.
Wheat & Soya Flours
From our UK milling operations we offer wheat flours for making wafers for biscuits and snacks. Soya flours and isolated soya proteins can also be used in wafers to reduce fat migration.
Flavour & Flavour Control
From ADMs extensive range of ingredients for sugar confectionery, the acidulant citric acid will impart a clean, tart flavour and with sodium citrate, will adjust the pH to the required level. Likewise, lactic acid with its milder acid taste is also used in hard boilings. Citric acid powder is a key component of sherbets and effervescent sweets.
Sweeteners
ADMs crystalline sorbitol is a nutritive sweetener giving bulk, texture and flavour in sugar-free confectionery such as chewing gum, compressed tablets and boiled, soft or chewy sweets. Sorbitol solution is an efficient humectant, sequestering and emulsifying agent in confectionery products. Sorbitol is well tolerated by diabetics.
